Tonkotsu – Spicy Creamy Pork
Fill a pot with water and bring it to a boil. Carefully add the egg and cook for 7 minutes for a soft boil or 11 minutes for a hard boil, then remove and place egg in ice bath. Once cooled, peel the shell and cut in half.
Heat 1 tsp oil in a pan over medium heat, add the sliced pork, and cook for 2–3 minutes until browned. Sprinkle in half the Bold Tastes of Tokyo Tonkotsu dry seasoning packet, mix, and set aside.
In a microwave-safe bowl, combine 1/2 tsp oil and sliced garlic, then microwave for 60–90 seconds until golden brown and crispy.
Bring 2 cups of water to a boil, add the noodles and cook for about 5 minutes.
Scoop 1/3 cup of the cooking water into a bowl and mix with the remaining dry seasoning and liquid packet.
Transfer the noodles and the rest of the water into the bowl, then top with pork, egg, garlic, green onions, and toasted sesame seeds.
