Cook noodles, drain and set aside.
In a bowl mash together avocado, garlic, salt & pepper, olive oil, parsley and lemon juice.
Add the noodles to the sauce and gently toss. Add a tablespoon of water if the noodles are clumping.
Add noodle mixture to bowl and top with ricotta, sun-dried tomatoes and any protein if you choose.
